Oh, dear! Popcorn ICE CREAM? - labradors - 06-22-2010

Found this on the El Gourmet website and it sounded so interesting I went ahead and translated it. Haven't tried it, yet, but plan to do so.

Popcorn Ice Cream with Fig Chutney and Caramelised Figs
Makes 4 servings.

Ingredients for the ice cream:
  • Cream: 2 Cups
  • Vanilla 1 Tbsp
  • Egg yolks: 6
  • Sugar: 1/2 Cup
  • Butter: 3 1/2 Tbsp
  • Popcorn (unpopped): 1 Cup
  • Cayenne or chile piquin powder: A pinch
Ingredients for the fig chutney:
  • Brown sugar: 1 cup
  • Butter: 3 Tbsp, softened
  • Balsamic vinegar: 2 Tbsp
  • Figs: 6, halved
Ingredients for the caramelised figs:
  • Figs: 4, halved
  • Sugar: As needed
  • Cayenne or chile piquin powder: A pinch
  • Butter: 1 Tbsp
  • Romero: 1 Sprig
Instructions for the ice cream:
  1. Put the cream and vanilla into a pot.
  2. Bring to a boil over medium heat.
  3. Meanwhile, put the egg yolks and the sugar into a bowl.
  4. Stir to dissolve sugar.
  5. Melt the butter in a deep pot.
  6. Add the corn.
  7. Cook over low heat.
  8. Sprinkle with cayenne pepper.
  9. Cover the pot.
  10. After the corn has finished popping, let it cool.
  11. Process one quarter of the popcorn and reserve the rest.
  12. Once the cream starts to boil, whisk it into the yolks.
  13. Incorporate the processed popcorn.
  14. Whisk again to ensure that the ingredients are thoroughly mixed.
  15. Allow the mixture to cool.
  16. Incorporate half of the whole popcorn and mix well.
  17. Place into the freezer for 24 hours.
Instructions for the fig chutney:
  1. Bring plenty of water
  2. to a boil in a saucepan.
  3. Place the fig halves into a sealable, boilable plastic bag.
  4. Add the balsamic vinegar, butter and sugar.
  5. Seal the bag, put it into the pot with boiling water, cover and simmer for about 30 minutes.
  6. Remove the bag from the pot, open it and let it cool.
Instructions for the caramelised figs:
  1. Sprinkle the fig halves with the sugar and cayenne.
  2. Melt the butter in a hot pan.
  3. Add the rosemary.
  4. Add the fig halves, cut side down.
  5. Cook until browned.
  6. Turn them over and finish cooking.
  7. Place the figs into a bowl and allow them to cool.
  8. Mash the figs with a fork.
Instructions for the presentation:
  1. Place a portion of fig chutney onto a plate.
  2. Add some whole popcorn.
  3. Add two small scoops of the ice cream.
  4. Garnish with the caramelised figs.

Adding to this thread another facet...

The Popcorn Martini!

Carmel Popcorn Martini:
Popcorn syrup:
4 cup water
1/4 cup brown sugar
3/4 cup white sugar
1 tablespoon brown rice syrup
approx 10 cups popped popcorn

Combine first four ingredients in a pot and bring to a boil. Add the popcorn (sans extra kernels). Boil for a few minutes until the popcorn is good a mushy. Let it cool down for a minute, then put everything in a food processor and blitz until smooth. Then use a fine mesh strainer or cheesecloth to squeeze all the liquid from the popcorn kernels. Refrigerate until ready to use. I find it tastes better after a couple of days in the fridge.

4 oz popcorn syrup
2 oz Butter Ripple Schnapps
2 oz soy milk

Combine all ingredients in martini shaker and shake. Pour into a sugar rimmed martini glass and enjoy. I used some homemade carmel popcorn as a garnish for the photo.

Notes: I like girlie martinis - meaning I like drinking and ordering them - but I don't want them to taste too strongly of alcohol. Hence, I removed the vodka from the original recipe. This makes the drink ridiculously sweet but oh - so - tasty! It is also vital to make the popcorn syrup a few days before the drinking commences.

Labs, that sounds really tasty. My favorite jelly belly is buttered popcorn, so I can relate to the taste. Be sure to let us know when you try this. Copied and saved!

You know, I am a purist myself and every time my neighbor asks,"What kind of martini?" I reply, "Booze and Ice." She always forgets that I don't want a bunch of fruit or cream or something on the rim...

Unbelievable: Was thinking about trying this ice cream, but when I was shopping, yesterday, not one of the three stores I checked had ANY popcorn in stock (except for snack bags of flavoured, already-popped popcorn).
