Chili con Queso Bites - cjs - 10-14-2010

I'm donating an appetizer to Habitat for Humanity's fundraiser Saturday and made these little goodies up this a.m. Boy, are they good - thought some of you might be interested.

As you can see, these are stcked in twos. I made the first batch (in a 1/4 sheet pan) to see how thick they would bake up. But found I like them better 1" square and double the thickness - easy to pick up with picks also.

Chili con Queso Bites (can anyone think of a better word than 'bites'????? please)

1/2 cup Newman's Own Black Bean & Corn Salsa (medium)
4 eggs
1/4 cup all-purpose flour
2 tsp. chili powder
2 green onions, thinly sliced, about 1/4 cup total
1 1/2 cups shredded chededar cheese

Preheat oven to 400°F. Grease an 8" square baking dish and set aside.

In a food processor, pulse the salsa to break up, but don't make too smooth.

In a medium bowl, whisk the eggs, then add the salsa, flour, chili powder and green onion; combine. Sprinkle the cheese over the top and gently fold in the the egg mixture.

Pour into the prepared baking dish and bake for 10 to 15 minutes until set. Serve warm or at room temperature with sour cream or (any ideas?) Makes about 40 1" bites (have to check this)

You can also freeze this. To heat, bake frozen appetizer (already cooked) at 350°F for 10 minutes or until heated through.

Looks yummy, Jean. Thanks! What about using a Spanish word for bites or appetizer or tiny bits, etc. Labs could probably help you with that.

In Spain, "appetiser" would be tapas. In Mexico, botanas.
"Bites" (in that sense) would be bocados and smaller bites, bocaditos.

They do sound (and look) yummy.

Antojitos is another word they use. It can mean "appetisers," in general, but is actually a diminutive form of antojos, which means "whims." Thus, appetisers are "little whims."
