I have shared this recipe at C2C. Thought of sharing it here too. As Halloween is coming, I bet you all had tons of pumpkins and deciding what to do with it. In Singapore, its not a holiday or something we celebrate. The Americans who lived and worked here in Singapore do celebrate Halloween..

Ingredients
250g Rice flour
50g Tapioca flour
100g Pumpkin (steamed)
80ml water
1 tsp salt
tapioca flour for dusting

Method
1. Add steamed pumpkin with water to puree.
2. Add salt and flour together.
3. Add pumpkin puree to mix till it form into a dough.
4. Use the pasta machine to roll into a smooth flat sheet.
5. Use a round cutter to cut into round shapes.
6. Deep fry in hot oil till golden brown.
7. Drain on paper towels.
8. Serve plain on its own or dip into curries.
9. uneaten crackers can be stored in air tight containers.

Oh good Lord, Gina - I was just thinking how bad Jeannette was for posting the pumpkin bacon bars and now you?????

I have everything for them, too. Oh well, I can be healthy in January, I guess.

okay, time to share a noodle version using Pumpkins. So you can have pumpkin noodles with soup, gravy ..
