I didn't see a review posted, soooo...

I made this and the yellow rice with black-eyed peas for dinner tonight. It was very good, and rather quick to get together as well. I doubled the peppers and onions, omitted the green olives (since DH does not care for them), and used chicken breasts instead of thighs. I have noted on my recipe that, using chicken breasts, not to add the chicken until the last 2 minutes of cooking time (they were a little tough this evening).

The yellow rice was good. Although it's a bit bland on its own, with that wonderful sauce it was a perfect accompaniment.

Oh, I also added 1/2 teaspoon crushed red pepper flakes since my banana peppers (frozen, from last years' garden) weren't a bit spicy.
