...the PlateOnline email newsletter that had a link to Dole fruit pairings? The "pineapple and fiery peppers" pairing had a recipe for a "Santa Fe Chicken Pizza" and the "mango and ginger" pairing had a recipe for a "Maddening Mango and Cool Key Lime Pizza." The rest of their site had about 20 more pizza recipes, including one for a "Carnitas and Mango Pizza" that really caught my eye:

Carnitas and Mango Pizza

Ingredients:
  • 1 1/2 Cups Onion, cut into julienne strips
  • 1 Tsp Vegetable oil
  • 1 Cup Pork carnitas, coarsely shredded (8 oz. by weight)
  • 3 Tbsp. Butter or margarine, softened
  • 1/2 tsp. Chipotle powder
  • 1/2 tsp. Ground cumin
  • 1 Pizza crust (14-inch)
  • 2 Fresh Frozen mango Halves, partially thawed, sliced
  • 1-1/2 Cups Manchego or queso blanco cheese, shredded (6 oz. by weight)
Instructions:
  1. Cook onion in oil in large non-stick skillet until onion is just tender, stirring occasionally. Add carnitas; cook just to heat through.
  2. Combine butter, chipotle powder and cumin in small bowl. Brush butter mixture over crust.
  3. Top with carnitas mixture and mango slices; sprinkle with cheese.
  4. Bake at 450°F., for 12 to 15 minutes or until crust is golden brown.
Notes:
  • If using unbaked pizza dough, bake for 15 to 20 minutes.

No, have looked at it yet - I love those newsletters. Don't they have the best looking and sounding recipes??? Thanks labs.

...and it uses Manchego, besides! Shall have to save up and make that.

Oh wow! That sounds really good. I love Plate newsletters, hmmmmm - haven't been getting my magazine lately???

I picked up a new BH & G Mexican magazine last night with lots of fruit "pairings" I'm dying for better weather so I can play.

I miss my newsletter. They stopped suddenly. I contacted the magazine, but they never started back up. But then, I never subscribed, so I figured that was why. Those recipes look GREAT!

Daphne, I've never subscribed to the magazine, but do get their newsletters. You only need to sign up on line. If you used to receive it, you should already have an "account" with your email address and a password to access the recipes. When you log in, click on "My Account," then on "Change My Account Settings" to specify which emails you wish to receive.

Thanks, Labs! They still have all my info, so I guess you have to update once a year to keep getting it. I must have missed the reminder.

I didn't update anything, but still get it. Don't know. Can't explain it, but that's one of the few such emails I actually look forward to receiving.
