Storing Ganache? - Gourmet_Mom - 02-27-2011

Okay, so I've got this HUGE bowl of chocolate-caramel ganache leftover. I would like to use it for another round of the dessert from last night when Ashley and Jason come in a couple of weeks. Will it hold in the fridge? Can it be frozen?

I'd freeze it - it won't become solid - I think I remember from freezing caramel before - but , it will be great. I'm just not a great one for holding something in the fridge - altho, I do have my penecillin (sp?) projects in there once in a while.

Maybe others have held it for a while.

I would be sooooo tempted to take snitches! If you're like me, I hope you can freeze it to avoid that temptation!

Jean, I'm bad about sticking stuff in there and forgetting it. I'm going to freeze it. "I would be sooooo tempted to take snitches!" That's another good reason to freeze it.
