Burrata Cheese - mjkcooking - 07-19-2011

Hi

Have any of you made or tasted this cheese?

Going to be serving this at DIL Birthday Party.

Sounds very interesting a mozzella and inside has heavy cream with
cheese bits.

Hi, I just got some at TJs and made the salad posted below with our first crop of tomatoes this year. It was really good. A very nice change from a plain caprese. I also had some tonight with very thinly sliced serrano ham. I just flattened the burrata over the slice of ham and rolled it. It was delicious.

TOMATOES AND BURRATA WITH TAPENADE*****

Burrata (a fresh Italian cheese similar to mozzarella but with a creamy center) is a luscious addition to this updated Caprese salad. If you can’t find it, use fresh mozzarella. Serves 4 as a starter or 6 as a side

Servings: 4

12 oz. Burrata
3 medium ripe beefsteak tomatoes
Kosher salt
freshly ground black pepper
6 large basil leaves
4 tsps. Tapenade
1 TBS. extra-virgin olive oil

Cut Burrata into ½" thick slices. Cut tomatoes into ½" thick slices. Tear basil into pieces.

Arrange the Burrata on a platter, alternating with the tomatoes. Sprinkle with salt and pepper to taste. Scatter the torn basil leaves over all and dollop with the tapenade. Drizzle with the oil and serve.

Preparation Time: 15 minutes Total Time: 15 minutes

Perfect timing!!! this is the 3rd Wednesday and we're off to Everett and will be stopping at Trader Joe's for our monthly supply of sparkling and sake - Burrata is added to the list!! Thanks Marye and CG.

How are you doing, Marye? Back to normal with the leg? Hope so.

Re: Burrata Cheese - Mare749 - 07-20-2011

No, but I put it on the list for when I go to TJ's. Thanks!

Re: Burrata Cheese - cjs - 07-20-2011

Well, hell - our Trader Joe's will order it for me, but they can't stock it, doesn't sell and so fragile. But, that wouldn't do me any good seeing as how we're only there once a month. But, will try a T.J.s in another town that is closer, so maybe. I was all set to come home today and make some ciabatta and have fun with it.

Re: Burrata Cheese - Harborwitch - 07-20-2011

Somewhere I saw a method for making this at home. I'll have to investigate. That salad sounds wonderful!

Re: Burrata Cheese - mjkcooking - 07-20-2011

I believe Whole Foods also has Cheese.

Sharon - I did a google search earlier and they have a site for making your
own cheese - looked like a easy to do recipe.

Bon Appetit.com has several recipes - like this one
Burrata Cheese with Tomato Salsa and Olive Salsa

Jean - Leg is lots better

Had never heard about this until one of the programs on the El Gourmet channel mentioned it. At that time, I did some research and also found THIS and THIS about how to MAKE it at home.

I still haven't had it nor tried making it, but it DOES sound interesting.
