Monday Dinner??? 11/7 - cjs - 11-07-2011

Ooops, almost forgot! What's on the menu for today?

I'm playing with a "Cream of _____" soup mix (to replace Campbell's), so we'll probably have a tuna casserole or some such.

Don't forget Erin's Cream of Green Bean Soup. Love that stuff!

Fish tacos with cilantro slaw and chipote-lime cream sauce.

Someone gave Jame's mom a Turk's Turban. A very strange looking squash, they say is similar to butternut or acorn. So, he peeled it and cubed it up. Now it's up to me to make food out of it LOL Think I'll put it in some chicken curry and serve with Naan on the side.

I've got to work with one of those, Cis. Let us know how you like it.

But, Erin's soup doesn't call for a canned cream of soup, Labs.

Ron is on vacation again this week, so we tend to eat on the fly. Just made ham salad sandwiches with crunchy lettuce on toasted whole wheat buns for a late lunch. Not sure what we'll have tonight. Maybe just soup and salad.

I don't understand what you mean? Did you actual GO to the link I posted and read the recipe? There's no canned soup in it at all.

Or is your point that you are not trying to MAKE a "cream-of" soup, but you already have something canned that you are trying to use up?

Regardless, I think we should all go to Trixxee's for dinner.

Re: Monday Dinner??? 11/7 - cjs - 11-07-2011

Stay with me here, Labs. I'm developing a recipe for my Pantry book to use in place of purchased 'cream of ____" soups. That's all I'm saying, and since Erin's recipe does not call for purchased soup, it does not need replacement parts.

Pay attention Labs....LOL!

I'm just doing BBQ chicken with green beans and corn on the cob. I've got a three day weekend coming up and am determined to plan some meals with something creative....including a shopping trip for the ingredients, so I'll be more compelled to make the meals.
