What's for Dinner, Wed., 1/11?? - cjs - 01-11-2012 What's on the menu for today? I dug into an older C@H (issue #81 - June 2010) for Steak Stacks with tomatoes and fresh mozz. I know, the tomatoes aren't good, but... Pesto Pasta with spinach is a go with dish. Roy brought home a flat iron steak, so looked around and this sounded good. Sounds perfect - Michael seems to have a lot of homework on Wednesdays so dinner will be one less thing to have to really deal with. Used Pantry/freezer items - frozen spinach and regular basil pesto. Don't know that I'll do it again, but was a nice dinner. Oh, and Daphne, of course I sprinkled the pasta with pine nuts. I have ground turkey, some leftover tomato sauce (from the pizza the other night), some pizza dough, mushrooms, and cheese. Perhaps a calzone?
