What's for Dinner, Wed., 1/11?? - cjs - 01-11-2012 What's on the menu for today? I dug into an older C@H (issue #81 - June 2010) for Steak Stacks with tomatoes and fresh mozz. I know, the tomatoes aren't good, but... Pesto Pasta with spinach is a go with dish. Roy brought home a flat iron steak, so looked around and this sounded good. Sounds perfect - Michael seems to have a lot of homework on Wednesdays so dinner will be one less thing to have to really deal with. Camarones Rellenos Envueltos con Tocino (manchego cheese stuffed shrimp wrapped with bacon) with a chipotle mayonnaise and Mexican rice as a side (from the Cuisine for Two cookbook). Used Pantry/freezer items - frozen spinach and regular basil pesto. ![]() Don't know that I'll do it again, but was a nice dinner. I have ground turkey, some leftover tomato sauce (from the pizza the other night), some pizza dough, mushrooms, and cheese. Perhaps a calzone?
