50 Nacho Toppings - cjs - 01-26-2013

Food Network newsletter sent this list yesterday and some of them sounded so good, decided to start in on them the same day!! Last night for our snack, we had #3 - Cajun Nachos.

Pretty much followed their lead, but didn't have Andouille, so used some smoked from one of the butchers we visited in Austin. No cheddar, so used combo of Mozz/Provolone/Jack and threw in some water chestnuts.

then when they came out of oven, topped with salsa and pickled jalapenos.

Have never put celery on nachos, but it's really good!!!

Nice Jean! Your nachos look amazing!

Actually we have a mixture we call 'salad' for when we make tacos. In the mixture is cucumber, celery, green onion, black olive, green olive, peppers (red or green), diced tomatoes, and of course some lettuce. Not a lot though, it is a particular balance we are looking for.

The nachos look great! Maybe I should put those on the superbowl menu!
