Making a batch tomorrow to take out on the boat, with wine of course How can you pack it and keep it crispy?

Wish I could help Cis - but the only time (darn near every wedding) I made spanakopita was to bake at last minute before serving. Hopefully someone will have the answer.

I always put parchment paper between the layers.

Yes, after they are baked and cooled. I don't know if an insulated bag would keep them warm enough (I've never used one), but , at the very least, they are not touching each other.

They still didn't stay real crisp, maybe better than the first time though
Not a one left over, so what does that tell ya
