What's for Monday's Dinner, 7/8/13?? - cjs - 07-08-2013 What's on the menu for everyone today? Guess we'll have chicken sandwiches and finish up the smoked chicken. I have 2 ears of corn and some feta left, so think I'll roast them up and make the corn & feta 'dip' (it's really more of a spread than dip) for a later snack. The general plan is Iraqi Grilled Chicken. I was planning on couscous with artichoke tapenade mixed in, and a spinach & feta salad. The spice rub is made, but I forgot about the "overnight" part. Bob is going to rub down the chicken and get it marinating. If he decides it needs overnight we'll do Buffalo dogs and ???
