Liquid smoke gets a bad rap from some folks – I found this article in a newsletter this a.m. and thought it might be an interesting read. Personally, I think liquid smoke (non-added flavors, tho) has a place in every kitchen.

I have only used it a few times, but it feel it has it's place. Interesting read on making it yourself! I'll have to check and see if the locally available stuff is the real deal or the fake stuff.
