So today it's the chicken/bacon/salad burritos. I might make them for a late lunch as Tony and Michael are going to a hockey game. Half the fun for Michael is eating at the various concession stands. Here's the recipe if anyone is interested - it's from Pork Producer's Council (old M.C. recipe) a few years ago. Thai Pork Burritos Serving Size : 4 Preparation Time :0:15 1 pound lean ground pork 2 tablespoons grated fresh ginger root 1 garlic clove -- peeled and crushed 2 cups cole slaw mix with carrots 1 teaspoon sesame oil 3 tablespoons soy sauce 2 tablespoons lime juice 1 tablespoon honey 2 teaspoons ground coriander 1/2 teaspoon crushed red pepper 4 large (10-inch) flour tortillas -- warmed Fresh cilantro -- chopped (garnish) Heat large nonstick skillet over high heat. Add pork, cook, crumble and stir until pork is no longer pink, about 3-4 minutes. Add ginger, garlic, onion and cole slaw mix and stir-fry with pork for 2 minutes, until vegetables are wilted. Combine all remaining ingredients except tortillas and cilantro in small bowl and add to skillet. Stir constantly to blend all ingredients well, about one minute. Spoon equal portions of mixture onto warm flour tortillas, garnish with cilantro, roll up to encase filling and serve. Re: Saturday's Dinner, 2/1/14?? - labradors - 02-01-2014 Yum!
