What's on the menu for today everyone?

New month - old food (freezer diving) - thawed out some pork sausage and I'm making Thai Pork Burritos.

Last night we wound up eating various leftovers which is good - fridge is cleared out and we didn't waste a lot of food this week. So today it's the chicken/bacon/salad burritos. I might make them for a late lunch as Tony and Michael are going to a hockey game. Half the fun for Michael is eating at the various concession stands. Kids!

Boy, the Thai Pork Burritos are really good!!

Here's the recipe if anyone is interested - it's from Pork Producer's Council (old M.C. recipe) a few years ago.

Thai Pork Burritos
Serving Size : 4 Preparation Time :0:15

1 pound lean ground pork
2 tablespoons grated fresh ginger root
1 garlic clove -- peeled and crushed
2 cups cole slaw mix with carrots
1 teaspoon sesame oil
3 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon honey
2 teaspoons ground coriander
1/2 teaspoon crushed red pepper
4 large (10-inch) flour tortillas -- warmed
Fresh cilantro -- chopped (garnish)

Heat large nonstick skillet over high heat. Add pork, cook, crumble and stir until pork is no longer pink, about 3-4 minutes. Add ginger, garlic, onion and cole slaw mix and stir-fry with pork for 2 minutes, until vegetables are wilted.

Combine all remaining ingredients except tortillas and cilantro in small bowl and add to skillet. Stir constantly to blend all ingredients well, about one minute. Spoon equal portions of mixture onto warm flour tortillas, garnish with cilantro, roll up to encase filling and serve.

Yum! It's fun how the use of many of the same ingredients in different ways makes possible a lot of interesting opportunities for fusion and crossovers between Asian and Latin foods.

Dinner tonight was soup and hot dogs. We've been furniture shopping every weekend and are finally ready to make a decision on new living room furniture. Yay!
