Did your clocks jump ahead this morning??? What's on the menu for everyone today?

Leftovers here! For some reason my pictures will not download to my laptop from the little camera card. So, no pictures and dinner turned out so great. Some of the guests took and shared pictures on facebook that I have shared, so at least I have a few for my binder. But, not taken the way I need them, darn!!!!

I hope you figure out your camera issues, Jean. But the ones on FB are pretty good!

We are off to Carolina Beach to Fish Bites again. YUM! A quick stop at Lowes Food for ingredients for dinner. I want to spend the afternoon on the deck, so I'm starting Kristie's Zuppa Toscano as soon as we get home. Here is her recipe. (Kristie, if you see this, I shortened it up a bit.)

Kristie's Zuppa Toscana (aka Olive Garden Soup)

Servings:6?

Ingredients
1 lb. Italian Turkey Sausage (casings removed, cooked and crumbled)
1/2 lb. low fat bacon (cooked and crumbled)
1 onion, chopped
2 cloves garlic, chopped
2 quarts chicken broth
1 head cauliflower
1 cup fat free Half and Half
1 pkg. Ranch Dressing Mix
1 pinch red pepper flakes (optional)
Black pepper, to taste
1 bag baby spinach

Preparation

After cooking meat in a large soup pot, sauté onion and garlic 4-5 minutes, and set aside.

Place broth, cauliflower, garlic, and onion in same pot over medium high heat and simmer until cauliflower is tender.

Combine meats in food processor and pulse a few times. (Don't over process)

Using a potato masher, break up cauliflower.

Add meat and simmer for 15 minutes.

Mix Ranch and Half and Half, and set aside.

Add spinach and Ranch mixture. Stir well. Add red pepper flakes and pepper to taste. Heat through.

We have GOT to stop getting the crab dip! No soup tonight! Bringing home half of our entrees! Sunday Brunch special...Shrimp and grits for 9 bucks!

That is a wonderful brunch Daphne! Very cool.

Those pan fried noodles look very interesting. I gotta try those. Blane, where did you get your chow mein recipe?

BTW Blane, I gave your Egg Foo Yung recipe to a friend of mine, and she loves it too! Big hit.

I am making Spaghetti & Meatballs, and a loaf of fresh baked bread .

I love shrimp & grits! They're going to have to go on the menu soon.

Our younger son is in the process of buying a condo on the 25th floor of a building in midtown. He wants to show it to us and see the view at night, so we're headed into the city for dinner and a house tour.
