I am making "smothered pork marsala" from one of the weeknight menus. A side dish of broccoli and peppers, and garlic bread with it.

I'm making my grandmother's recipe for baked cod with stewed tomatoes and grated onion wrapped in foil and baked with steamed rice on the side and steamed asparagus. Nice healthy meal.

I had good intentions . . . got home and now we're having microwaved "baked" potatoes stuffed with scrambled eggs. Neither one of us has the energy for much more.
Still no oven - using a borrowed itty bitty microwave.
