Leek and Orzo Gratin - cjs - 07-28-2014 What a tasty and healthy side dish this is - an old recipe from Weight Watchers and very good with the Garlic flank steak. Leek and Orzo Gratin Weight Watcher’s recipe, 2009 1 cup whole wheat orzo 2 tsp. olive oil 3 medium leeks, cleaned and sliced, white and light green parts only 1 T. chopped fresh thyme Salt & black pepper 1/4 cup (1 oz.) shredded Fontina cheese (or what you have on hand) Preheat oven to 375°F. Spray a 2-qt. baking dish with cooking spray. Cook orzo according to pkg. directions. Heat oil in large nonstick skillet over medium heat. Add leeks and cook, stirring occasionally, until softened, about 10-15 minutes. Stir in the orzo, thyme, salt and pepper. Transfer the orzo mixture to the prepared baking dish and sprinkle with cheese. Bake until heated through, about 15 minutes. Note: I had a few snow peas in the fridge that I added to the leeks. P.S. the gratin (and steak) was very good with 7 Deadly Zins, also. Re: Leek and Orzo Gratin - Old Bay - 07-28-2014 I like everything in this. This just sounds delicious! Re: Leek and Orzo Gratin - Gourmet_Mom - 07-28-2014 I agree with Bill! This sounds heavenly! Copied and saved! Thanks, Jean! Re: Leek and Orzo Gratin - Harborwitch - 07-28-2014 Lovely! That looks soooooo good Jean! Re: Leek and Orzo Gratin - DFen911 - 07-28-2014 Speaking of flank steak. I can't even afford it now! I remember when it was like .99 cents a pound to $1.89 a pound. Now it's $8 a pound!! That is crazy. Re: Leek and Orzo Gratin - Mare749 - 07-28-2014 That recipe sounds very familiar to me but I'm going to copy it again just in case I don't have it. Sounds so good! Thanks for posting. Re: Leek and Orzo Gratin - cjs - 07-28-2014 You're all welcome. I'm thinking 'clean out the fridge' ingredients would work real well in this also. Re: Leek and Orzo Gratin - Harborwitch - 07-28-2014 Artichoke hearts . . . Re: Leek and Orzo Gratin - karyn - 07-28-2014 Darn...wish I'd seen this earlier! It would have been just as good and healthier than the butter & cheese garlic bread that I'm making. (However, I do love garlic bread!!) Re: Leek and Orzo Gratin - cjs - 07-28-2014 uh, me too, Karyn! |
