Leek and Orzo Gratin - cjs - 07-28-2014

What a tasty and healthy side dish this is - an old recipe from Weight Watchers and very good with the Garlic flank steak.

Leek and Orzo Gratin
Weight Watcher’s recipe, 2009

1 cup whole wheat orzo
2 tsp. olive oil
3 medium leeks, cleaned and sliced, white and light green parts only
1 T. chopped fresh thyme
Salt & black pepper
1/4 cup (1 oz.) shredded Fontina cheese (or what you have on hand)

Preheat oven to 375°F.
Spray a 2-qt. baking dish with cooking spray.
Cook orzo according to pkg. directions.
Heat oil in large nonstick skillet over medium heat.
Add leeks and cook, stirring occasionally, until softened, about 10-15 minutes.
Stir in the orzo, thyme, salt and pepper.
Transfer the orzo mixture to the prepared baking dish and sprinkle with cheese.
Bake until heated through, about 15 minutes.

Note: I had a few snow peas in the fridge that I added to the leeks.

P.S. the gratin (and steak) was very good with 7 Deadly Zins, also.

Speaking of flank steak. I can't even afford it now! I remember when it was like .99 cents a pound to $1.89 a pound. Now it's $8 a pound!! That is crazy.

You're all welcome. I'm thinking 'clean out the fridge' ingredients would work real well in this also.

Darn...wish I'd seen this earlier! It would have been just as good and healthier than the butter & cheese garlic bread that I'm making. (However, I do love garlic bread!!)
