What's on the menu for everyone today??
I made a batch of rice day before yesterday, so I'm having fun using it in different dishes - today is an old favorite, Cheese & Rice salad and either roasted chicken or burger patties.
If Sulphur isn't flooded from the horrendous rains the last 36 hours, maybe Roy can go to town and get some chicken thighs. Fingers crossed.

I'm at Holly's today watching all four kids due to a water main break at their school. So, going to make Billy's Chicken and Dumplings because I know they will eat that.

I picked up flank steak. We'll have that with usual potato and salad tonight, and the rest will be for French Dips Wednesday.

Another day where everything sounds good.
Tonight it's orange chicken, Mongolian beef and jasmine rice.

We are having Southern Fried Catfish, American Fries, and Creamed Parmesan Spinach!
Just pulled the creamed spinach out of the oven and it is fantastic!

Oh, Laura, the creamed spinach sounds wonderful! Is it a C@H recipe?
We're having an old favorite--Skillet Chicken, Broccoli, Ziti, and Asiago Cheese. I probably add about twice as much broccoli as the recipe calls for so that I can pretend it's healthy...

Laura, that spinach dish is so wrong! You are hurting me! And southern fried catfish?!?! I scoffed at the price of catfish at Walmart today. I refused to pay it! I'll find fresh somewhere! My fishermen are slacking this year! I need to set a fire under them!

My freezer is almost empty...almost - then I can go meat/fish shopping.
