Daphne's Review Dinner - Due March 16th - Gourmet_Mom - 02-26-2015 The decision has been made! AND CHANGED! We'll do the Creole Shrimp Burgers with the recommended sie. I would ask one of you to please post these recipes. My iPad has been acting up lately and won't copy paste easily. Also, if someone wants to recommend a dessert, feel free to add it. I may actually try the Tiramisu Crepes, but I didn't want to commit. I've never done crepes. So I was afraid I'd chicken out. I didn't commit the review date in the title of the thread without consulting you guys. What do you think of March 16? Creole Shrimp Burgers The rémoulade does double duty — first as a topping for the burgers, then as a delicious dip for the Cajun Oven Fries. Makes 2 serving Total time: 45 minutes + chilling FOR THE BURGERS, PULSE: 4 scallions, chopped 1 rib celery, trimmed and chopped Zest of 1 lemon 12 oz. large or medium shrimp, peeled, deveined, patted dry, and chopped 1/4 cup panko bread crumbs 2 Tbsp. mayonnaise 2 tsp. Old Bay seasoning 1/4 tsp. Tabasco sauce 1 Tbsp. olive oil Red leaf lettuce 2 hamburger buns, halved, brushed with melted butter FOR THE RÉMOULADE, STIR: 1/2 cup mayonnaise 2 Tbsp. Dijon mustard 1 Tbsp. each minced shallot and kosher dill pickle 2 tsp. capers, chopped Black pepper and Tabasco sauce to taste For the burgers, pulse scallions, celery, and zest in a food processor until minced. Add shrimp and pulse until coarsely chopped; transfer to a bowl. Stir in panko, 2 Tbsp. mayonnaise, Old Bay, and 1/4 tsp. Tabasco. Form mixture into two patties, 3/4-inch thick; chill 20–30 minutes. For the rémoulade, stir together 1/2 cup mayonnaise, Dijon, shallot, pickle, and capers; season with black pepper and Tabasco and chill. Heat oil in a cast-iron skillet over medium-high. Coat patties with nonstick spray and cook, partially covered, until golden and firm, 5 minutes per side; transfer to two plates. Toast buns in skillet 1 minute. Serve burgers on buns with lettuce and rémoulade. Per serving: 846 cal; 65g total fat (9g sat); 239mg chol; 2085mg sodium; 34g carb; 3g fiber; 29g Cajun Oven Fries So the fries are done at the same time as the burgers, start baking the fries while the burgers are chilling. Then cook the burgers during the last 10 minutes of baking the fries. Makes 2 servings Total time: 40 minutes 1/2 tsp. each kosher salt, garlic powder, dried thyme, and paprika 1/8 tsp. each cayenne pepper and black pepper 1 russet potato, cut into 1/4-inch sticks (12 oz.) 1 Tbsp. olive oil Preheat oven to 450°. Coat a baking sheet with nonstick spray. Combine salt, garlic powder, thyme, paprika, cayenne, and black pepper. Toss potato sticks with oil and seasonings. Arrange potato sticks in a single layer on prepared baking sheet; bake 15 minutes. Flip potato sticks and continue baking until golden and crisp, 10–15 minutes more. I would probably just use a tablespoon (or a little more) for each burger. I also have gotten to the point of buying individual kaiser rolls from the fresh bakery department because I figure they have to have less calories than some of those packages of big buns - some of them have like 280 calories. |
