Pizza dough - Roxanne 21 - 03-06-2015 Hi you pizza specialists. I am having guests for a pizza dinner tomorrow night and I would love to make my dough this evening. At what point during the dough making process am I able to refrigerate it---after the first rise or before the rise? Also, how long before making the pizzas should I take from the fridge. I tried to google the answer but it is not very clear. THANKS GUYS!! Re: Pizza dough - cjs - 03-06-2015 1. After first rise you can refrigerate. 2. 5-6 hours. You want it at room temp. 3. You didn't ask, but I would make the dough right now. It develops more flavor the longer it can age in fridge. What toppings will you use? Have fun. Cheeses, salami, mushrooms and red pepper and onions---His request because he has had this before... He wants to impress his partner....not great pizzas here---they drop the ingredients on the floor and use them on the toppings I have seen this myself---YUCK!!!!!! Just before putting pizza in oven, drizzle the top with olive oil and brush the crust edge with olive oil - if you want a shiny crust. Offer a container of crushed red pepper flakes.
