A friend gave me a 3 pound piece of Danish blue cheese. I adore the stuff, but I'm mildly lactose-intolerant (so I eat soft cheese infrequently, and in small doses). I assume that this will keep for a while (??), but does anyone have ideas for recipes?

One of my favorites-

Essential steak
with crisp green salad

2 New York strip steaks,
seasoned with salt and
pepper (about 6 oz. each)

1 tsp. vegetable oil
3 Tbsp. minced shallots,
divided
1/4 cup balsamic vinegar
2 Tbsp. crumbled blue cheese
2 Tbsp. white wine vinegar
2 Tbsp. olive oil
1 tsp. Dijon mustard
4 cups crisp salad greens
Salt and pepper to taste

Sauté steaks in oil in a nonstick
skillet over medium-high heat for
3 minutes per side. Remove from
heat; let steaks rest for 3 minutes.

Add 2 Tbsp. shallots to skillet; sauté
about 1 minute. Add balsamic
vinegar; cook until liquid is
reduced by half, about 1 minute.
Pour sauce over steak; garnish with
blue cheese.

Whisk together vinegar, oil,
remaining 1 Tbsp. shallots, and
Dijon in a bowl. Season with salt
and pepper. Toss greens with
vinaigrette. Serve with steak.
Per serving: 615 calories; 45g total fat (14g sat);
100mg chol; 13g carb; 272mg sodium; 2g fiber;
40g protein

Steak quesadillas w/ blue cheese aioli from issue #10 is a winner also.

You can freeze it also, for future.

I'm not lactose intolerant, I just don't care to be hit in the face with Bleu. But, here are some ideas I like to do.

Bake up a flatbread and top with grilled(or not) grape halves, crumbled cheese and drizzle with honey.

Arrange greens on a platter. Top with the thinly sliced apple, toasted hazelnuts, blue cheese, grapes, figs and bacon. Drizzle with a light vinaigrette.

Mix the innards of a baked potato with a little of the cheese.

Of course, there is my family's Blue (Roquefort) cheese dressing.

great in a beef and spinach quesadilla

My favorite ways are Jean's Blue Cheese Dressing, Erin's Pasta Cobb Salad, and Cobb Salad.

I love "baby, or young" Gorgonzola. . Gorgonzola Dolce. In my opinion the perfect blue.

I think that I'll try the essential steak recipe tonight, but change it to chicken (I just don't care for the taste of beef...) And DH will get hot pepper cheese on his and be happy, not realizing what he's missing by "not liking" blue cheese!

Daphne, do you have a link for the Pasta cobb Salad???
