Review: Peppadew Romesco, Issue #112 - cjs - 07-27-2015

Lordy, Lordy this a one great dip!! I think it is one of the best Romescos I've made!

I only made 1/2 the recipe, but don't know if I can stay out of it until dinner.....

Peppadew Romesco Dip
Issue #112 – July/Aug 2015, pg. 33
Subtly sweet and slightly spicy, this may become your favorite new dip,sauce, and condiment. Makes 16 servings (1 cup)
Total time: 10 minutes

1 jar (14 oz.) mild sweet picante peppers (such as Peppadews), drained ( I used 4 oz by weight of peppadews and used just 1/2 of the following ingredients)
1/4 cup extra-virgin olive oil
1/4 cup slivered almonds
1/4 cup shredded Manchego cheese
1 scallion white, chopped
1 clove garlic
1 tsp. white wine vinegar
1/4 tsp. ground cumin
1/8 tsp. ground coriander
Salt to taste
Thinly sliced scallion greens
Pita chips

Pulse peppers, oil, almonds, Manchego, scallion white, garlic, vinegar, cumin, and coriander in a food processor until smooth; season with salt. Transfer dip to a bowl; chill until ready to serve.

Garnish dip with scallion greensand serve with pita chips.

Per serving: 76 cal; 5g total fat (1g sat); 2mg chol; 65mg sodium; 7g carb; 0g fiber; 1g protein

I'm also going to do the grilled shrimp & grapes from the same page. Plus one skewer of sausage hunks & grapes. Going to be a fun dinner.

And, the rest of the small plates dinner - outstanding!!

Also made the Grilled Shrimp & Grape Skewers (added a skewer of sausage rounds also) - what a great combination of flavors. If anyone needs the recipe, I'll post it.

What a fun summer dinner.
P.S. the wines: Sara's Harbinger Winery's 2013 Shiraz (wonderful!)
and Sebes Estate 2014 Sauvignon Blanc - another winner!
