Bacon-cider Pork

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds pork tenderloin (1 1/2 to 2 lbs)
1 tablespoon olive oil
8 slices thin-sliced bacon
1/4 cup minced shallots
1/2 cup apple cider or juice
2 tablespoons unsalted butter -- sliced
salt and freshly ground black pepper -- to taste

Trim tenderloin of fat and silverskin and cut into steaks (about 1 1/2" thick). Season with salt and pepper.

Wrap each steak with a strip of bacon and secure with a toothpick. Heat oil in a large ovenproof saute pan over medium-high heat and saute pork 5 minutes per side, or until browned. Tip the steaks on their edges to brown the bacon, rolling them as they brown, about 3 minutes total. Cover and finish cooking to an internal temperature of 145°F, about 5 minutes. Remove pork and keep warm; pour off all but 1 Tbs drippings.

Saute shallots for 2 minutes in the same pan, stirring constantly. Deglaze with cider, scraping up the brown bits and simmer 2 minutes. Then add butter, swirling until melted. Return pork to pan along with any accumulated juices and season sauce with salt and pepper.

Marmalade Sweet Potatoes

Amount Measure Ingredient -- Preparation Method

2 large sweet potatoes (2 to 3 to equal 1 1/2 lbs)
1/2 cup orange marmalade -- melted
salt -- to taste

Preheat oven to 425°F. Wrap the inside of a baking sheet with foil and coat with nonstick spray.

Cut each potato into 8 wedges, toss with marmalade and season with salt. Arrange on prepared pan in a single layer, then roast for 35 minutes, or until fork tender, turning once.

Sauteed Spinach

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon olive oil
1/2 cup sliced onion
1 tablespoon slivered garlic
1/4 teaspoon red pepper flakes
10 ounces fresh, chopped spinach
salt -- to taste

Heat oil in a large skillet over medium-high heat. Saute onions for 3 minutes, then add garlic and pepper flakes, and cook 1 more minute.

Add spinach and toss with tongs until wilted. Season with salt.

My copy was waiting for me when we got home yesterday!! Those recipes look really good. Are you suggesting them for next dinner menu, BillyJ? (the week of 6/19)?

The taters are great. So was the spinach, but I didn't add the red pepper flakes.

Yes Jean, I thought we might do those if everyone agrees. I'll be returning home on the 17th or 18th. Spending another week watching Marilee's house and dogs in Portland.

I've got some of that 4X smoked bacon I'll use. It's a little thick *sigh*, but tastes sooooooo very good!

Oh good. We're on for the main dish anyway, but I'll have to come up with something besides the Marmalade Sweet Potatoes...maybe I'll bake the sweet potato wedges with a little butter and then grate some parmesan over them.

My little sis, living in the middle of the truck farm, said she would get me a whole big bag of fresh spinach, right out of the field....yum! Think I'll go raid their cold room. (The truck farm cold room that is.)
