Hi! Hey, I'm looking for a recipe for avacado butter. I saw it once on a cooking show, but it was from about 5 years ago. Does anyone have any ideas? It's to go with salmon.

I'll give this a try - soft butter mixed with mashed up avocado and add - (start out with unsalted butter and add salt to taste)

lemon zest
champagne vinegar
chives
tarragon
toasted pistachios
orange zest
anchovies
bacon

any of the above would be wonderful additions - just add to taste.

lemon zest and bacon, yum.

lemon zest and anchovies, yum again.

I'm going to have to play with this - I have salmon thawing out for tomorrow or next day....

Hey, thank you! I think I'm going to add some garlic & lime; then roll it in wax paper into a tube, frige to harden, so it can be sliced to place on individual pieces of salmon. Of course, I love spicey additions like the chinese five spice or green chilies or even chipotle. You know; spice is the variety of life! LOL I can't seem to make a dish without some heat. That's my bad! I'm thinking about blackened salmon! What do you think?

blackened salmon (and other meats/fish) was a fun thing to play with.
