Eggplant Patties - dollop - 10-14-2006
Even people who say they "hate" eggplant have loved these...I hope you'll enjoy them.
Eggplant Patties
1 medium eggplant
1 tsp. grated onion
1/2 cup cracker crumbs
3 Tb. All Purpose flour
1 tsp. baking powder
1 egg, beaten
Peel eggplant and cut into small pieces.
Boil eggplant in salted water until tender.
Drain well.
Mash eggplant and mix in other ingredients; stir well.
Drop spoonful onto well greased griddle and fry both sides till golden brown.
yields 4 servings

I have never tried eggplant. My sis and the 800 pounder say they don't like them. Maybe I'll make them and not tell them what it is

Billy, I just love and adore the appearance of eggplant, from the little white round ones to the large purple beauties so available here. But have only ever used it once, that was in a veggie soup which went down very well.
