Need help finding recipe - joanneb - 12-03-2006 I seem to have lost an issue that had a recipe for a soup with greens in it. It had sausage, beans and greens, and had a cuban flair to it. I believe it was in issue 54 or 55. If anyone can find this recipe can you mail it to me? I know I made it for Christmas Eve last year and everyone raved about it. I just can't find the recipe again. They also have a "lite" version and a Cuban Black Bean Soup. * Exported from MasterCook * Brazilian Black Bean Soup Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : A List Soups-Stocks-Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Saute and Remove -- Add: 4 strips thick-sliced bacon -- diced 8 ounces kielbasa -- diced Add and Saute: 1 cup onions -- diced 1 tablespoon garlic -- minced 2 teaspoons chili powder 1/2 teaspoon kosher salt Stir in and Mash -- Deglaze with: 2 cups canned black beans -- drained and rinsed 1/2 cup dry converted white rice 5 cups chicken broth Saute in 2 T. Olive Oil -- Add: 3 cups collard greens -- stemmed, chopped 1 cup Roma tomatoes -- seeded, diced 1 Serve with: Orange wedges Sliced serrano chiles Saute bacon in a soup pot over medium-high heat until crisp; remove and drain on paper towels. Add kielbasa and brown in bacon drippings; remove, drain on paper towels, and pour off all but 1 T. drippings. Add onions, garlic, chili powder, and salt; saute until vegetables are soft, 2-3 minutes. Stir in beans and mash. Add rice, cook for 1 minute, then deglaze with 1 cup of broth, scraping up bits at the bottom of the pot. Add remaining broth along with the bacon and sausage; reduce heat to medium and simmer until rice is tender, about 20 minutes. Saute greens and tomatoes in oil over medium-high heat in a separate nonstick skillet just until greens are wilted; stir into soup and simmer to heat through. Serve soup with oranges and sliced chiles.
