Bloody Bourbon Onion Marmalade - Harborwitch - 03-07-2007

Please bear with me a little bit here - after a few bourbon's in the cook it got a little fun last night.

It was going to be a simple dinner; burgers and some left over potato salad. I just can't leave anything alone though - had to grill up some onions to go on the bacon cheese burgers!

1 large red onion, halved and sliced
3 Tbs oil, butter, or bacon drippings
salt & pepper

Saute onions until beginning to soften in the fat. Season with salt & pepper.

1/2 to 3/4 c bourbon
1/2 to 3/4 c bloody mary mix

When the onions are beginning to soften add bloody mary mix and bourbon (amounts to personal taste), cook over medium heat, stirring frequently, until mixture is thick and jam like. Serve on burgers while warm.

We used an extra sharp white Vermont cheddar.

and I love to sail. I would drink the burbon and use scotch for the onions.
