Grilled Sweet Peppers - bjcotton - 07-05-2007
Here's the pepper recipe I found. I will try these again. We were so full after hotdogs and burgers we really couldn't enjoy them. I cooked them for a snack later in the evening.

Grilled Sweet Peppers

16 small mini sweet peppers
6 ounces cheese blend (white cheddar and/or Monterey Jack) -- shredded
2 medium Roma tomatoes, cored, seeded, and chopped
2 ounces each chopped cilantro leaves and red onion
2 ounces sour cream -- chilled
Heat grill to medium-high.
Cut peppers lengthwise [including stem]; clean and rinse.
Mix all ingredients except the sour cream and divide among the peppers filling evenly.
Grill until charred [do not peel], about 5 minutes. Spoon a small dollop of chilled sour cream on each pepper and serve.
