Issue #64 -
Jambalaya on the Grill ?
Tandoori Turkey Tenderloin ? (someone made this already, but...)

or from the SmartCarbMenus book -
Pan-seared Scallop Salad?
Japaese Steak Rolls?
Seared Steak with Red Wine Vinaigrette?
Grilled BBQ Pork Ribs?

or...?

what shall we do?

The Tandoori Turkey gets my vote. But then, the scallop salad and the japanese steak rolls sound good too........Oh, I don't care, I'll make whatever sounds good to the others. Just not chicken this time. My Ron wants a break from chicken.

Sounds like I better order that low carb cookbook!

I vote for the scallops! He'll eat those and I won't have to make him a different supper. And we have some beauties around here right now. I don't have this book, are we talking nice, big, dry scallops? Or sweet little bay, not that it makes any difference. Just like to take advantage of the the sea's while I can.

O.K., since there are three votes for the Scallops now, shall we close this discussion and go for them???? If, we keep talking, we just get more befuddled...

PJ, nice dry big ol' sea scallops!! I'll go post the dinner and the recipe.

Wow, where did this come from???? Here you go, H.C.

Pan-Seared Scallop Salad

Saute; remove:
4 slices thick-cut bacon, diced

Sear:
12 Sea Scallops

Saute:
1 cup red onion, thinly sliced
1 cup yellow pepper, chopped

Add and Simmer:
1/2 cup cherry tomatoes, halved
1/4 cup cider vinegar
2 T. brown sugar

Stir in:
Seared scallops
Reserved bacon pieces
2 T. chopped fresh parsley
Salt & pepper to taste

Serve Over:
6 cups fresh Spinach
(above is under 20 carbs)

(under 40 carbs)
add:
1/2 cup orange supremes
(under 60 carbs)
add:
1/2 cup angel hair pasta

Saute bacon in a large pan until crisp.
Remove bacon to a plate, drain, reservng the drippings.
Add 1 T. of drippings back to the pan and increase the heat to high.

Sear scallops 2-3 minutes on each side till golden. Remove to a plate.
Add another 1 T. of drippings to the pan, reduce heat to medium.
Saute onion and pepper till soft, about 5 min.
Add tomatoes, vinegar, and brown sugar. Simmer 3-4 min.
Stir in reserved scallops and bacon.
Finish by adding the parsley and seasonnings.
Serve dressing and scallope over fresh spinach.

Their Note: For the crust you want on the scallops - get your pan really hot so the scallops sizzle when they hit the surface. Then leave them for about 2 min. before turning. DON'T MOVE THEM AROUND. This creates the crust you want.

Mmmm, sounds wonderful and I happen to be going to Watertown this evening. Will find scallops somewhere!!
Yummy can't wait, oh and spinach what could be bad?

Just so everyone knows - did you check the date of the dinner for review????? It's not for the next one....well, it could be, but maybe this time of year, we want a little cheaper one?????
