Refreshingly Fresh Fruited Chicken Salad - MUSICMAKER - 07-19-2007
It was 99.4 degrees here today with humidity so thick you could cut it with a knife. We had this salad for dinner today -- what a refreshing dish. Hope you enjoy it as much as we did. For those of you on WW, surely you can use low fat sour cream and make this a friendly fare.
REFRESHINGLY FRESH FRUITED CHICKEN SALAD
Serves 2
DRESSING
Place in a jar and shake well, set aside:
1/4 cup sour cream
1 tablespoon fresh orange juice
2 teaspoons honey
1 teaspoon poppyseeds, lightly toasted
1/8 teaspoon ground ginger
1/8 teaspoon garlic powder
SALAD
2 boneless, skinless chicken breasts, prepared in your favorite way
1 peach or nectarine, peeled, sliced
1/2 cup seedless green grapes, halved
1/2 cup seedless red grapes, halved,
1 ounce montery jack cheese, or other, shredded
lettuce, baby greens, enough for two
Place fruit in a bowl and dress, tossing gently. Divide lettuce between two plates. Divide fruit between the two plates. Slice the chicken breast on the diagonal and place over the fruit. Add more dressing if desired. Serve.

I make the salad quite frequently but have never used a dressing close to this. It sounds great!
I should be unpacking from the trip but had to see what's going on in the forums.

This sounds very good, Linda, and good reminder about using lower fat sour cream.

Great idea for summer dinner... My list of things to try is getting out of hand. I need to start making a real list 'cause I can't rely on my memory any more!
