Feta Stuffed Zucchini - cjs - 08-17-2007

Had this last nite, found it in a stack of 'old' ideas for using up zucchini - so have no idea where it came from.... it's very tasty!

2 zucchini, about 7" long, halved legthwise

1 T. butter
1 large shallot,minced
2 cloves garlic, minced

1 egg
1 1/2 T. flour
2 oz. feta, crumbled

Pimenton (Spanish Paprika)

Oven to 350 - lightly grease an ovenproof dish.
Remove the 'meat' from the zuccs and chop up.

Saute the zucc, shallot and garlic in the butter till soft.
In small bowl, beat egg lightly. Stir in the flour, feta and cooked zucc mixture. Stuff the zucc boats. Sprinkle with paprika.

Bake 35 - 40 min, then brown a little under the broiler if you want.

Nice flavors. Served with ribs I cooked in the crockpot - haven't done that before, don't think I will again. They were O.K., but I prefer oven baking and then finishing on the grill. Now that the heirlooms are really producing, we had little crostinis with a mix of tomatoes, garlic & olive oil - I could have made dinner on just those!!
