Cocktail Party! - pjcooks - 11-21-2007

I've been reading all your holiday plans and couldn't seem to get my butt in gear.

Because the kids are going to be scattered on Thanksgiving Day, visiting their girlfriends' families, I’ve decided to do just a small dinner tomorrow night in case anyone has the chance to stop in. Sooo, I’m having a champagne cocktail party late Friday afternoon.

The menu:

Brie en Croute w/ cranberry walnut chutney
Spinach Muenster cheese swirls
Bacon, lettuce and tomato bruschetta
Goat cheese phyllo cups w/roasted tri color peppers
Shrimp cocktail
Meatballs
Either stuffed mushrooms or mushroom strudel w/swiss and tarragon and white wine
Salsa and scoops

Dessert Table

Chocolate Marquise
Angel Food cupcakes w/coffee frosting
Molasses Crinkles
Toll House if I have time.

The cocktails

Kir Royale
Mimosa
Pointsettia
Golden Gate
Seattle Mocha Joe (1 oz Kahlua, ½ oz Amaretto, 5 oz sparkly, 4-5 coffee beans for garnish

I can’t wait to get rolling, good thing I’m cooking small tomorrow night!

I sure hate to ask you to do something when I know how little down time you get. BUT, sometime could you post a couple of those menu items recipes. I would be so grateful.

Here ya go, please forgive the way they're written, don't always follow exactly and sort of go by sight on quantities.

Phyllo cups w/goat cheese

Oven 350

Mix: 4 oz goat cheese
2 oz cream cheese

Add 2 eggs Mix well

Add 2 T chopped scallions
Fresh dill if desired (TT)
Fresh ground pepper (TT)

Place phyllo shells (2 pkg, 30 total) on half sheet, pour mixture in. Bake until filling puffs, 12-15 min.

Top w/ roasted red, yellow and orange pepper strips.



Brie en Croute
The puff directions come from the Pepperidge Farm site

Oven 400

1 puff pastry sheet

Thaw at room temp for 30 min. On lightly floured surface, roll into 14” square. Cut off corners to make a circle.

Top w/ 1 wheel of brie, around 12-14 oz
Cranberry (or other)Chutney, I’m using either Jean’s or Lorraine’s, sorry, can’t remember, I’ve made them both, both very good!)
Toasted walnuts

Bring edges up around Brie, twist together, brush w/egg wash and bake 20 min. I refrig mine for a bit fist to let the pastry chill a bit. Cool at room temp for about half an hour.



Spinach swirls

Easy!! Go to www.pepperidgefarm.com

BLT bruschetta

Slice ficelle or baguette into half inch slices.

Combine 4-5 slices cooked bacon, crumbled
Chopped plum tomatoes, canned is good, too

Grill or toast ficelle slices, rub w/garlic. Top w/b/t mix.

Finish w/ Fresh basil chiffonade
Ciliengine (small mozz balls) or any other favorite
(blue is good here, too!)
a drizzle of your fav olive oil


Mushroom Strudel or stuffed mushrooms

Julia Child mostly

Oven 400

1 cup duxelles
4-6 Tb heavy cream
2 Tb fresh tarragon (or 1 tsp dried)
4-6 Tb fresh bread crumbs
A splash of white wine
S & p TT

Mix well. Add 4 Tb ( or more, TT), finely grated Swiss.

Fill 12 mushroom caps, brush w/clarified butter and bake for 15 min.

The strudel idea is in the [Email]C@H[/Email] weeknight menus 2, p80. If I do this, I may need more to double my filling recipe.

Happy Thanksgiving, everyone. Just popped in to say that and WOW! You are all very sophisteceted cooks. I have never heard of some of these dishes and need a cooking dictionary to understand the rest. (sort of just kidding) LOL My life has become very hectic but I lerk as often as possible. I wish I had more time to spend reading all of your wonderful cooking adventures. Enjoy your families and all that good food! coco
