For All The Sickies - cjs - 03-03-2008

Since Daphne has cancelled her Dinner Review, we were discussing maybe doing this Chicken Noodle soup for all the sickies out there! Whether she decides to do it or not, you all may want to keep the recipe handy if you don't have the Splendid Soups book.

We're not sick (cross fingers), but it sounds so good, I think I'll add it to the menu.

Old-Fashioned Chicken Noodle Soup
C@H’s Splendid Soups

Roast:
1 whole chicken, seasoned with salt & pepper (3-4 lbs.)

Bring to a Boil; Stir in; Simmer:
8 cups chicken broth
2 1/2 cups celery, sliced
1 1/2 cups carrots, sliced
1 1/2 cups leeks, sliced into half-moons, rinsed thoroughly
Shredded chicken pieces and juices from the pan

Add:
8 oz. kluski* noodles

Stir in; Serve soup with:
1/4 cup chopped fresh parsley
Lemon wedges

Preheat oven to 450°F.

Roast chicken on a rack in a roasting pan for 1 hour, or to an internal temperature of 165°F in the thigh. Remove from the oven and let rest 15-20 min. When cool enough to handle, remove meat from the bones in large pieces.

Bring the broth, celery, carrot, and leeks to a boil in a large pot over high heat. Reduce heat to medium and simmer gently for 5 min. Stir in chicken pieces and any juices from the roasting pan; simmer 5 more min.

Add noodles, cover pot, and remove from heat. Let stand for 15 min., and then eat a noodle to test for doneness. If they’re still slightly undercooked, replace lid, and let stand an additional 3-5 min., or until fully tender.

Stir in parsley and serve soup with lemon wedges.

*C@H note: “Kluski” is a generic Polish term for all types of dumplings, but sometimes also refers to any variety of noodles. For this, I used a dry kluski noodle found in the grocery store aisle with the dried pastas. But if you can’t find them, any dry or frozen egg noodle will work.”


Adding on:
Avocado-Tomato Melts
C@H’s Splendid Soups
Makes 8 halves

Toast; Top and Season with:
4 English muffins, split
1 ripe avocado, pitted, peeled, and sliced
2 Roma tomatoes, thinly sliced
Salt & pepper

Sprinkle with:
1 cup farmer cheese, shredded
1/4 cup Parmesan, shredded

Preheat broiler to high.
Roast muffin halves on a baking sheet under the broiler until golden. Top with avocado and tomato, then season with salt & pepper.

Sprinkle each muffin with both cheese and broil 2-3 min. or till melted.

I've made this sup a few times and had a hard time finding the Kluski noodles until I looked in the Kosher food section. Manishewitz brand. Also, don't skip the lemon at the end.

Sounds good! Will have to go dig in the freezer and see if I can find a chicken hiding in there. That would feel soooooo good.

What do you Italians know about feeding sick people...

Us Norwegians know that milk toast cures any ills.

My grandmother put cinnamon and sugar on the toast and then broke it up in the milk. My throat closes up at the thought of it. I guess I'm a more Irish sickie - bourbon, hot water, lemon & honey!!! A nice bowl of hot & sour soup would be good too.
