Corned Beef Leftovers - Ideas??? - cjs - 03-18-2008

Wow, if we put our minds to it, we can have quite a list of ideas for next year and we can all buy 10 corned beefs!

Here's one that Jim from c2c posted a while back and since I can't find my old one, this is the one I've done a couple times. I just left notes and all with it.

Reuben Casserole

6 slices seeded (or unseeded) rye bread -- cubed
1 can Sauerkraut (drained) -- (14 oz)
1 lb corned beef (cut into strips)
3/4 cups Russian Dressing
2 cups shredded Swiss Cheese

Spray a 2qt casserole dish with cooking spray.
Spread the cubed bread along the bottom of dish.

Add the sauerkraut spreading it over the bread.
Add the corned beef and pour the russian dressing over it.
Spray one sheet of aluminum foil and place the spray side down over the dish and cover.
Place dish in a pre-heated 375F degree oven for 20 mins.

Uncover, sprinkle the 2 cups Shredded Swiss over the top and bake for another 10 minutes or until cheese is bubbly.

I found the 1 lb of corned beef to be a bit excessive and may go with 3/4 lb next time, but all you meat lovers the 1 lb may do the trick.

The whole thing from prep to sitting down with knife and fork took less than an hour.

Also, leftovers the next night, I found needed more russian dressing drizzled on it.
Notes: me - Jim, I have one that is so similar it could be the same - we love it! And Roy's favorite for l/os??? This heated up with a couple of fried eggs over the top...and he's a happy camper.

NOTES : Jim - I made this casserole over the week-end. It was quick and pretty delicious. I've had the recipe for awhile, but it is handwriiten on a piece of yellow lined paper and no clue where I picked it up.

There's a great recipe for Spicy Hash in the same issue that has the Whiskey Glazed corned beef. I'm thinking about trying my hand at that!

I don't have time to type out the entire recipe right now, but I will later. Unless someone has it ready to post???

We never have any left overs to do anything with by the time all the picking at it is done and it would be time to make another meal.

Jean, I have a recipe very similar to the casserol you posted - quantities are a little different and it adds sour cream too. I have always wanted to try it. I think I like the looks of your better.

Meg, I have been looking at that spicy hash too. Just nothing to make it with...

Last year many made the reuben hush puppies from the same issue. I think many people liked them and even made them baked instead of fried. Here is the post. Reuben Hush Puppies

Oh my the Hush Puppies - that darn thread was not my finest hour by a long shot!!!

I'd forgotten we really liked the baked 'puppies' - thanks for bringing that up, Erin.

I was searching my MC, trying to find my recipe for the reuben dip Sharon mentioned. (couldn't find it), but I did find this recipe. Looks good!

Potato Reubens

Amount Measure Ingredient -- Preparation Method

2 large eggs
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups frozen shredded hash brown potatoes
1/4 cup vegetable oil
12 ounces corned beef (12 slices)
2 cups sauerkraut -- well drained
1/2 cup bottled Russian or Thousand Island
4 slices Swiss cheese (about 4 ounces) -- (4 x 7-inches)

Preheat the oven to 375ºF. To make the pancakes: Beat the eggs, onion
powder, salt and pepper in a medium bowl; stir in the potatoes. Heat the
oil in a large nonstick skillet over medium-high heat. Drop one-fourth of
the potato mixture (a heaping 1/4 cup) into the skillet and flatten to
form a 5-inch pancake; repeat to make 4 pancakes. Cook pancakes on each
side for 3 to 4 minutes or until golden, turning once with a spatula.
Drain the pancakes on paper towels; transfer to a jelly roll pan or baking

Top each pancake with one-fourth of the corned beef, 1/2 cup sauerkraut, 2
tablespoons dressing and 1 slice cheese, folded in half.

Bake for 10 minutes or until the cheese melts and the Reubens are hot.

Haven't made the spicy hash but my husband picked one off Epicurious a few months ago. It's amazing how far just a little bit of leftover corned beef can go in hash.

Made this years ago-very tasty but impossible to present attractively-
1 small onion chopped
5 oz fresh mushrooms, sliced
1/4 C dry red wine
1/2 C sour cream
12 oz corned beef, chopped
1/2 t each salt & dry mustard
1/2 t each rosemary and tarragon
1/4 t pepper
1 T horseradish
Place onion, mushrooms,and wine in blender and blend until smooth. Add remaining ingredients; blend until smooth. Chill several hours and serve with a variety of crackers and party rye. Yields 1 & 1/2 C. From a 1982 Ducks Unlimited Cookbook (I believe their first).

I am with you. Between my son and my hubby. There are no leftovers in this house. Perhaps enough for a sandwich the next day. That is it. Guess we'll just have to make more if these leftover ideas turn out to be irresistable. I like the sound of the Corned Beef Pate. I could go for that right now.

Erin & Bill - thanks for posting those two - I do have some corned beef left over, now what to make....
