Issue #70-August 2008 Recipes - - 07-06-2008 I cannot wait for the Cuisine at Home to arrive but this one was terrific. My husband, daughter and I usually try one or two dishes immediately but this time we "splurged". We tried (all for one meal) Huli Huli Chicken, Lemon Shake-ups, Grilled Corn on the cob, and Parmesan Oven Fries. Oh my soul!! The meal was delicious (we added two more drumsticks to the chicken) and we had nothing left on the plates - even all of the sauce was gone for the corn. The Lemon drinks were very refreshing - we used the small canning jars - This is one meal that we will definitely have again - Thanks so much for such diversion in the recipes. In case you can't find your issue 70 by the time you want it, here's the Huli Huli chix recipe (I'm still looking for my issue #60 ) Huli Huli BBQ Chicken Issue #70, pg 17, 2 servings Whisk together: 1/4 cup each: pineapple juice, fresh lime juice and dark brown sugar 2 T. each: ketchup & dark soy sauce 1 T. each: garlic, minced, fresh ginger, minced & vegetable oil Salt & pepper to taste Marinate - Grill: 4 chicken drumsticks Whisk all ingred (except chicken) together in a bowl. Marinate drumsticks in half the juice mixture in a large resealable plastic bag for 1 hour, refrigerated. Reduce remaining mixture in a saucepan over med-high heat till thickened, 5 min.; set aside for basting. Preheat grill to high. When hot, turn off 1 burner, leving the other(s) lit. Remove drumsticks from marinade & arange on the unlit portion of the grill. Cook chicken to an internal temp. of 165 F., about 40 min. Baste with reserved glaze every 10 min and turn after 20 min. ------ Did you want the side dishes also?
