Blueberry Bread Pudding - cjs - 08-27-2008

My this one is a keeper - from Southernfood.about.com. The batch fits into 5 mini-alum. loaf pans also. (spread around the neighborhood)

* Exported from MasterCook *

Blueberry Bread Pudding

3 cups milk
3 large eggs
5 cups day-old torn French or Italian bread or rolls -- (5 to 6)
1 cup granulated sugar
1/4 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest -- optional
2 cups fresh blueberries
3 tablespoons powdered sugar

Heat oven to 350°. Butter an 11- x 7-inch baking dish.

Whisk together the milk, eggs, sugar, flavorings, and zest. Add the bread and let stand for 10 to 15 minutes. Toss blueberries with powdered sugar then stir into the bread mixture. Pour into the prepared baking dish. Set the baking dish in a larger pan and set in oven. Add about 4 cups of very hot water to the outer pan. I use water from my hot water dispenser, or bring water to almost simmering before adding to the larger pan. Bake for about 1 hour, or until the bread pudding is set and lightly browned on top.

Serves 8 to 10.

I need to make this for the weekend as well. Jean, do you have a brandy sauce recipe to go on that?

Re: Blueberry Bread Pudding - iBcookin - 08-27-2008

Sounds wonderful to me - something to do with the 40+ bags of blueberries in the freezer!

I don't have one, I have combined a brandy and pomegranate juice and......shoot can't remember.

Re: Blueberry Bread Pudding - chef_Tab - 08-27-2008

Dont hold out on me Jean! I know you have one. You are just tired from playing with the choc. garlic mashed potatoes! I have to say, the picture of that was lovely.

Hey, Daphne! Welcome home. If no one has a recipe, I guess I will have to experiment with the brandy. Some for me, some for the sauce, etc.

One for me, one for the sauce...>BIG taste<...one for me, one for the sauce....>BIG taste<....

Experimenting is work, but somebody's gotta do it...right? >HICCUP<
