Lemon Mini Muffins - KHP - 01-07-2009

Does anyone know if in the Lemon Mini Muffins recipe (Issue 72, Dec 08) they are asking you to mince an entire lemon, peel and all (minus the seeds), or is it just the flesh/pulp? Thanks

I'm guessing because I don't have the recipe in front of me, but I'm pretty sure they want lemon zest and lemon juice from the lemon. Zest is the outer yellow part of the peel, not the white fleshy part of the peel. I use a zester or a peeler to get the zest, then mince.

Yes, actually it is saying to "mince a lemon, cut fruit into chunks, remove seeds, then pulse in a processor until the texture of oatmeal".

Then I guess you have to take 2 TBS of that.

I can't wait to hear this review. They look sooo yummy, but I can't get past the idea of the bitter taste of the pith.

I "mince" the zest on my microplane grater.....works beautifully!!
