Your mom sounds like a blast. Okay, so I got the pineapple and tapioca today to make the crisp, but won't be making it until Saturday because I'll need to give away a good part of it, but it sure does sound good. I haven't had fresh pineapple in ages! My folks used to own a home in the Dominican Republic and when we would visit over the holidays, we'd eat pineapple and mango so much, for the first few days of vacation, our mouths would be sore. Then we'd load up with pineapple and avacados (grown in the yard) and limes to bring back home. Oh yeah, and fresh pork bacon! Bob wanted to know why I bothered to put it in a fancy little bowl - shoulda just put the baking dish on the table between us with a couple of garden trowels! That was so amazingly freakingly good!!!
