OK, pineapple is on my list to buy.

Re: Pineapple Crisp - cjs - 03-09-2009

I'd like to offer up a suggestion to all of us who like this dessert - how about playing with it and making it our own??? Oatmeal has been suggested as a change for the topping maybe pine nuts, how about some additions for the filling?

go with pineapple -
a little mint, basil.... rosemary
cayenne, cinnamon, ginger.....star anise
raspberries, walnuts

oh, there are all kinds of things to play with in it - hmmmmm...

Guava.

Re: Pineapple Crisp - BarbaraS - 03-09-2009

I was thinking about a hint of cinnamon in the topping.

Maybe add some mango or papaya?

As for adding nuts, I would go for sliced almonds, maybe toffee flavored.

I agree with Barbara, it seems to call for almonds. Will make notes for next time.

I just have to say that I swear this stuff gets better every day! If you can make it last. Today is day 3 and I just nabbed a spoonful. Hoping I can leave it alone until after dinner tonight. No way there will be a day 4 though.

OMG!!! What was I not thinking?! Fresh/toasted coconut on top! Either added after baking or during the last 15 minutes to toast.

No coconut for me.

Compadre, cómprame un coco.
No, Compadre. No compro coco, porque poco coco como, por eso poco coco compro.

Spanish tongue twister. Translated:

My friend, buy me a coconut.
No, friend. I do not buy coconuts, because I eat very few coconuts, therefore, I buy very few coconuts.

Hubby says it should just be served warmed with cold vanilla ice cream.

Barbara

We have just a little left, should be interesting...

[edit to add]

Instead of instant tapioca, how about pureed pear?[/add]

Re: Pineapple Crisp - Mare749 - 03-09-2009

Barbara, that's how we had it, warm with vanilla ice cream. Pure heaven! But, now that you mentioned coconut, I think that's going to be the first idea I try. Toasting for the last 15 minutes sounds like a great way to go.
