Making Gravlax - luvnit - 03-10-2009

My neighbor is going salmon fishing here pretty soon and is promising me some wonderful/fresh salmon. I have decided to make some homemade gravlax with some of it.

I found this wonderful step-by-step guide at the website I mentioned a few days ago called Cooking for Engineers . There are detailed instructions AND wonderful pictures for each step.

Make your own Gravlax

What is Gravlax: (from wikipedia)
Quote:

Gravlax or gravad lax (Swedish), gravad laks (Danish), gravlaks (Norwegian, Danish), graavilohi (Finnish), graflax (Icelandic) is a Scandinavian dish consisting of raw salmon cured in salt, sugar, and dill. Gravlax is usually served as an appetizer, sliced thinly and accompanied by hovmästarsås (also known as gravlaxsås), a dill and mustard sauce, either on bread of some kind, or with boiled potatoes.
