Jean Wine and Cheese Festival - esgunn - 04-21-2009

Jean, I know you posted most of the recipes, but how did the weekend go? Details, Details...

Re: Jean Wine and Cheese Festival - Lorraine - 04-21-2009

Yup, inquiring minds want to know.

Erin, how nice of you to ask -

Oh, it was so much fun!! We sold out of the cheese I used for each of the two offerings. I had typed up the recipes and taped them to the pkgs. of cheese.

Here's what I ended up doing.

Gourmet Cheddar Straws ~ featuring Grafton Village 2 year aged cheddar

1/4 lb. coarsely grated Grafton Village 2 year aged cheddar
1 cup all-purpose flour
3/4 stick cold unsalted butter -- cut into tablespoons
1/2 teaspoon salt
Rounded 1/8 teaspoon ground black pepper
1 1/2 tablespoons milk

Preheat oven to 350°F with racks in upper and lower thirds.
Pulse cheese, flour, butter, salt, and pepper in a food processor until mixture
resembles coarse meal. Add milk and pulse until dough forms a ball.

Work the dough using a puff pastry style. Roll it, fold it in thirds, reroll it,
fold in thirds again and repeat about 10 times, flouring the surface as needed.
Cut dough with a lightly floured pizza wheel or lightly floured sharp knife
into 1/3-inch-wide strips. Or, cut the dough by using a pasta roller to #2
thickness and cut with the fettuccine cutter.

Carefully transfer to 2 ungreased baking sheets, arranging strips 1/4 inch apart.
(If strips tear, pinch back together.)

Bake, switching position of sheets halfway through baking, until pale golden,
8 to 9 minutes. Cool completely on baking sheets on racks, about 10 minutes.

Cypress Grove Chevre Bread Pudding

1/4 lb. country-style bread, with crust
11 oz. Cypress Grove Fresh Chevre (one log)
1 tablespoon fresh rosemary leaves
2 large eggs
1 cup heavy cream
1/2 cup milk

Preheat oven to 350°F.
Tear bread into large pieces to measure 2 1/2 cups.
Crumble cheese into 1/4-inch pieces. Mince rosemary.
In food processor pulse bread in 2 batches until mostly
coarse crumbs (there will be some fine crumbs).

In a large bowl, mix together the eggs, cheese, cream
and milk just until cheese is combined in. Add salt &
pepper to taste; stir in bread crumbs and mix well.
Pour mixture into a greased 11X7” baking pan.

Bake in middle of oven until puffed and golden, 25-30
minutes. Transfer to a rack and cool 10 minutes. Cut
into 1” squares and serve warm or room temperature.

------

The bread pudding bites were baked, not in a water bath, just dry heat in a baking sheet so the 1" squares were about 3/8" thick. Just a great little bite for tasting with wines. (this is the one Denise made a couple of times as a bread pudding and I also upped the goat cheese from 6 oz. to 11 oz. for a more intense bite.)

And everyone just love the cheese straws - they're really fragile, but we were all just scarfing them down.

Yummy! So, how often do they have those events? Sounds fun. Thanks for sharing the recipes!

Re: Jean Wine and Cheese Festival - cjs - 04-21-2009

This was the first annual - but if the other wineries (7 of them) were as busy as we were, I'm sure it will be repeated each year.

If it was the first, then it isn't annual yet. "Annual" is based upon the fact of having been held yearly. When an event is only being held for the first time, there may be PLANS to hold it yearly, but that has not actually come to pass, so the term "annual" cannot be used yet. Instead, the proper term is "inaugural," or just "first."

Labs....please. Go find your room!!

Re: Jean Wine and Cheese Festival - Lorraine - 04-22-2009

A lot of the wineries here have annual festivals as well. There was one last weekend, and Montpellier (home of Thomas Jefferson) has theirs this weekend. Jean, both of the recipes sound great!
