Crockpot Lasagna Revisited - farnfam - 11-30-2009 This turned out great!! Still had family over on Saturday, went for a walk in the woods with daughter and SIL, stacked some firewood, helped James' mom with some plants that needed attention, in short accomplished a lot and enjoyed time with my company, while this cooked happily in the crockpot. Was every bit as good as oven lasagna and was a big hit with everyone To make it even easier, I cooked the sauce days ahead and refrigerated it. Recipe calls for reg noodles, but I had some "oven ready" type and assembled in the morning. I am positive it would work great either way, noodles were not at all over cooked. Crock Pot Lasagna Recipe By : Serving Size : 6-8 -------- ------------ -------------------------------- 1 pound ground beef 1 jar spaghetti sauce (26 oz) 1 cup cold water 15 ounces Ricotta cheese 7 ounces mozzarella cheese -- shredded 1/4 cup parmesan cheese -- grated 1 egg 2 tablespoons fresh parsley -- chopped ( I used basil) 6 lasagna noodles -- uncooked Brown meat in large skillet, drain. Stir in spaghetti sauce and water. In a seperate bowl, mix ricotta, 1 1/2 cups mozzarella, 2 Tbsp parmesan, egg and parsley. Spray bottom of crock pot liner with Non-stick spray. Spoon 1 cup meat mixture into slow ooker; top with layers of half each of the noodles, broken to fit and cheese mixture. Cover with 2 cups of the remaining meat sauce. Top with remaining noodles, broken to fit, cheese mixture and the rest of the meat sauce. Cook on LOW 6 hours or until liquid is absorbed. Sprinkle with remaining cheeses; let stand covered 10 minutes for cheese to melt. NOTE: For best results, do not cook on High. I also said that I didn't do the jar sauce and cold water thing but made an equal size batch of my own. Re: Crockpot Lasagna Revisited - esgunn - 11-30-2009 That is the recipe I posted a while ago - you just use the regular noodles, uncooked. The second time I made it I added more noodles than what was called for. I liked it lighter on the noodles but the kids really like noodles. Plenty of sauce and it will feed all 5 of us easily. The kids really like this recipes. The water added to the jar of sauce is for the noodles. Just gives them a little more moisture to absorb. Cis, did it work out ok without the water? Sauce wasn't too thick? It really just tasts like regular lasagna - maybe no crusty cheese edge, but good. I like the idea of making your own sauce - but in my everyday life I liked the ease of just throwing it together with jarred sauce. So I'm still not sure it would work assembling the night before and sticking in the fridge. There is NO way I could assemble the morning of and I'm CERTAIN William wouldn't do it for me.
