Kind of guessed what was going to happen, though, considering how often blanching is used for peeling things, including tomatoes for concasse, of course. As far as to peel or not to peel, if my potatoes are 'dirty' I peel them, if I buy the nice clean potatoes with the thin skins, I just leave it. And if they are red, I leave it no matter what, even for potato salad. Who doesn't like skin-on red mashed potatoes? Tastes great!
