Last nite, we were truly inspired! Took and eggplant and cut in to chunks, (not too small) and marinated it in a little EVO, @ 1/4C white wine vinegar, salt, lots of garlic chopped,basil, red pepper flakes and some sweet roasted red pepper slices (and alittle of that juice too). Let it sit for a hour or more. Saute in olive oil til eggplant is done @15 - 20 min (it might have been less but that's what it felt like). Add sea food medley: shrimp, calamari, tiny scallops. Cook til done, serve over spaghetti or fettucine.....drink wine.
