- 1 Turkey (11 Lbs)
- 2 Cups Tequila
- 2 Cups Milk
- 1/4 of an Onion
- 3 Cloves Garlic
- 8 Bay leaves
- 6 Sprigs Fresh thyme (or one tablespoon ground)
- Salt
- Pepper
- Oil
- Rinse and dry the turkey.
- Place the turkey into a deep container and inject the Tequila into the turkey using a flavour injector.
- Puree together the milk, onion, and garlic (literally, the instructions say to beat these together with a beater, but pureeing with a blender seems to make more sense).
- Bathe the turkey with the milk mixture.
- Season the turkey with salt and pepper, to taste.
- Add the bay leaves and the thyme to the sauce.
- Allow the turkey to marinate for 12 hours, turn it over, and let it marinate another 12 hours (this way, the whole thing gets marinated).
- After a total marinating time of 24 hours, preheat the over to 425F.
- Remove the turkey from the container and tie together the legs and wings (with non-shredding string).
- Rub oil onto the turkey and place it into a roasting pan.
- If you wish, you may stuff this turkey however you like.
- Roast the turkey for about 3 hours, 45 minutes (about 20 minutes per pound).
- When the turkey is done, remove it from the oven, cut and remove the string from the legs and wings, and serve.
