Fruit Soup

Ok so I had some of this over the weekend and it was surprisingly good.

Summer Melon Soup

4 c ripe cantaloupe cut into 1" pieces (seeds removed)
4 c watermelon cut into 1" pieces
Juice of one lemon
1-2 tsp honey liquefied (15 secs in micro)
1/4 tsp salt
2 fresh jalapeno seeded and finely minced
1/2 c fresh blueberries

Puree the cantaloupe and watermelon in a food processor, add lemon juice, honey, salt and peppers to taste. Chill about 4 hours. Garnish with fresh blueberries and serve.

Now while we didn't have this as the soup course, it was a great starter dish while being outside with the bbq going Next time I think I'll omit lemon juice and use lime and add just few spinkles of cilantro on top.

Okay, I'm not sure I can sell William on this one. But it does remind me that I haven't tried Lorraine's Pickled Cantaloupe. I think that's what she called it? Cantaloupe are in season and cheap right now!

Oh, we'd like that! I love fruit soups as a starter for summer dinners - so refreshing.
