Toffee Bananas
Makes 4 servings

Ingredients:
  • 1/2 Cup Self-rising flour (or 1/2 cup of all-purpose flour plus 3/4 teaspoon of baking powder and 1/4 teaspoon of salt)
  • 1/4 Cup Cornstarch, plus extra for dusting
  • 1/4 Cup cold water
  • 1 Teaspoon Vegetable oil, plus more for deep-frying
  • 2 Bananas, thickly sliced diagonally
  • 2/3 Cup Sugar
  • Black and white sesame seeds, for sprinkling
  • Ice-cream, to serve
Instructions:
  1. Whisk together the flour and cornstarch.
  2. Add the water.
  3. Mix until smooth.
  4. Stir in vegetable oil.
  5. Fill a wok or deep-fryer one-third full of vegetable oil.
  6. Heat oil to 375F.
  7. Lightly coat the banana slices with extra cornstarch.
  8. Using a bamboo skewer (just as a utensil – not to for serving), dip a banana slice into the batter.
  9. Transfer to the oil.
  10. Repeat with more banana slices, but don't overcrowd the fryer.
  11. Deep fry until golden and crisp
  12. Drain on paper towel.
  13. Repeat with remaining bananas in batches.
  14. Place the sugar in a large, heavy-bottomed pan over medium heat.
  15. Cook, shaking the pan occasionally, until a golden-brown caramel forms.
  16. Remove from the heat.
  17. Working quickly place a fried bananas into the caramel.
  18. Turn to coat.
  19. Drop into a large bowl of ice water to set the caramel.
  20. Drain immediately.
  21. Repeat with remaining bananas, one at a time.
  22. Sprinkle with black and white sesame seeds.
  23. Serve with ice-cream.
In converting the measurements from metric, I rounded up a bit, but a little extra batter won't hurt and I think the ratios should still be good. When I do try this, if the amounts need to be adjusted, I'll post it here. On the show, the batter looked like a thin (but not TOO thin or watery) pancake batter.

Also, on the show, they did not use the ice cream, but just ate them as they looked in the last photo.
If blueberry muffins have blueberries in them, what do vegan muffins have?

Oh crap! I just (mildly) complained about all the rich fried food we've been consuming... thanks a lot, Labs.
