What's on the menu for everyone today??

Not a clue here again, yet.

Well, this was fast! Just got inspiration from #115 -
Chicken & Noodle Stew and the Apple Salad with cider vin. Looks so good!
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

It's not supposed to get out of the 30s today, so I'm making the slimmed down version of the Zuppa Tuscano tonight. We stopped at Food Lion after church in town yesterday for ingredients. So the Italian turkey sausage, low fat bacon, and cauliflower are ready and waiting.

That stew looks really good.

Going to reheat the other half of the spatchcocked chicken. Probably au gratin potatoes and a sliced cucumber/tomato salad.

Blane, to be honest, if I had seen the recipe before tasting it, I would probably not have tried it. And after tasting the real thing at Olive Garden, I would definitely not have tried it. But Kristie had my try it at a church function, and I fell in love with it. William really likes it, so that's a big testament. LOL!

Daphne, I found an Olive Garden copy-cat recipe on Pinterest that I'm going to try. William's blessing is a big plus.

Blane, the one I make is quite different from the original.

Kristie's Light Zuppa Toscana (aka Olive Garden Soup)

Servings:6?

Ingredients
1 lb. Italian Turkey Sausage (casings removed, cooked and crumbled)
1/2 lb. low fat bacon (cooked and crumbled)
1 onion, chopped
2 cloves garlic, chopped
2 quarts chicken broth
1 head cauliflower
1 cup fat free Half and Half
1 pkg. Ranch Dressing Mix
1 pinch red pepper flakes (optional)
Black pepper, to taste
1 bag baby spinach

Preparation

After cooking meat in a large soup pot, sauté onion and garlic 4-5 minutes.

Add broth and cauliflower to the same pot over medium high heat and simmer until cauliflower is tender.

Combine meats in food processor and pulse a few times. (Don't over process)

Using a potato masher, break up cauliflower.

Add meat and simmer for 15 minutes.

Mix Ranch and Half and Half, and set aside.

Add spinach and Ranch mixture. Stir well. Add red pepper flakes and pepper to taste. Heat through.
