Caramelized Onions, Crockpot

6 onions
1/2 cup butter

You can use just about any kind of onion for this--Vidalia, Spanish, yellow--it's your choice.

Slice the stem and root ends off each onion. Peel the onions, but leave them whole.

Place onions and butter in crockpot and cook on low for anywhere from 12-36 hours. The onions will get deep golden brown and literally fall apart.

Use right away or freeze for later.

Suggested uses: in omelets, sandwiches, soups, casseroles, dips, pasta sauce, or alongside any grilled meat.

Note: If your crockpot is big enough, you can double the amount of onions.

This is a GREAT start to French Onion Soup!!! Thanks, Billy!! Less of a hassle watching the caramelization process but still get that wonderful aroma!!! YUMMM!!!!

That's what I was thinking when I went looking for it. I hate to caramelize onions, but love caramelized onions. Being as I'm lazy, I went looking for an easier method and found it.

Thanks Billy, actually I found another recipe that was similar to yours and it also called for a can of chicken stock, but I don't think I would want to add that because there would be too much liquid and the onions would boil instead of carmelize. Yours sounds like a better plan. I'm going to try that this weekend.

If you slice the onions they caramelize quicker, I usually do. Haven't frozen any yet, but probably will.

Another great idea, BJ! I abhor caramelizing since it takes so long, but I love the onions too.

Thanks, Billy, this is something I've never thought of doing. My customers love roast beef sandwiches with caramalized onions, but too often stove top space is at a premium so I rarely get to do this.
