I'm going to sneak in before Roxanne's Birthday dinner request - how does this one sound to everyone?

Jambalaya Stuffed Bell Peppers
(Cuisine at home, February 2004, Issue 43, p. 42)
Makes: 6 Peppers Total Time: 45 Minutes
For the Tomato Concasse—
Heat and Saute:
2 T. olive oil
1 cup onion, chopped
2 t. garlic, minced

Stir in; Bring to Boil:
1 can (28 oz.) diced tomatoes
1/2 t. kosher salt

For the Cajun Spice Mix—
Combine:
1 t. paprika
1 t. kosher salt
1 t. garlic powder
1/2 t. black pepper
1/2 t. onion powder
1/2 t. cayenne
1/2 t. dried oregano
1/2 t. dried thyme

For the Jambalaya Stuffed Bell Peppers—
Prepare:
2 cups cooked white rice

Cut Tops Off:
6 large bell peppers, seeded

Saute in 1 T. Olive oil:
8 oz. turkey kielbasa, cubed
8 oz. boneless, skinless chicken breast, cubed

Add:
1 cup onion, chopped
1/2 cup bell pepper, chopped
1/2 cup celery, chopped
2 T. Cajun spice mix, see above
2 t. garlic, minced

Stir in; Simmer 3 Min. then Cool:
1 can (14.5 oz.) diced tomatoes

Mix; Sprinkle on Peppers:
1/2 cup bread crumbs
2 T. Parmesan cheese, grated
1 t. olive oil
1/2 cup scallions, finely chopped

Heat oil in medium saucepan for the Tomato Concasse. Add onion; saute 3 minutes. Add garlic; saute 30 seconds.

Stir in tomatoes and salt; bring to a boil. Reduce heat to low and simmer 20 min.

Combine ingredients for Cajun Spice Mix (or use a commercial mix).

Prepare rice according to package directions. Preheat oven to 450°.

Cut the tops off and seed bell peppers; par-cook (chop the tops and use them in the filling).

Saute kielbasa and chicken in oil in a skillet for 2 minutes.

Add vegetables, spice mix, and garlic; cook 3 minutes.

Stir in cooked rice and tomatoes; simmer 3 minutes, or until tomato liquid is absorbed. Cool mixture slightly. Spoon about 1 cup filling into each par-cooked pepper shell. Place peppers in a baking dish coated with nonstick spray; pour 1 cup water into the dish.

Mix bread crumbs, Parmesan, and 1 t. olive oil in a bowl, then sprinkle each pepper with crumb mixture. Bake for 15 minutes, or until heated through. Divide warm Tomato Concassé evenly among 6 shallow pasta bowls. Nestle a stuffed pepper into the concassé. Garnish with chopped scallions.

Heat and Saute:
2 T. olive oil
1 cup onion, chopped

Add:
2 t. garlic
1 can (28 oz.) diced tomatoes
1/2 t. kosher salt

Heat oil in medium saucepan. Add onion; saute 3 minutes.

Add garlic; saute 30 seconds. Stir in tomatoes and salt; bring to a boil. Reduce heat to low and simmer 20 minutes.

Cajun Spice Mix
(Cuisine at home, February 2004, Issue 43, p. 43)
Makes: About 1/8 Cup Total Time: 5 Minutes Rating: Easy

Combine:
1 t. paprika
1 t. kosher salt
1 t. garlic powder
1/2 t. black pepper
1/2 t. onion powder
1/2 t. cayenne
1/2 t. dried oregano
1/2 t. dried thyme


Combine all ingredients.

Oh piddle - just noticed the concasse and seasoning is included in the 'mother' recipe.....oh well.

(can't you just taste this dish with 18 hour bread to sop up the goodies in the bowl?????)

Jean---you are a LIFESAVER!!! I think this would be great for my dinner party!!! I will be alone until the 2nd and then the family is here on the 4th---this is something that would be ideal for a one person meal---and I do have to eat something healthy---YEAH???
